Colorful Chicken Dijon Fettuccini
Ingredients
- 1/3 Cup light mayonnaise
- 1/3 Cup light mayonnaise
- 1 Tbsp. Dijon mustard
- 1 Tbsp. dried parsley
- 8 ounces fettuccine noodles
- 2 Tsp. canola oil
- 1/2 Red bell pepper, julienne sliced strips
- 1/2 Yellow bell pepper, julienne sliced strips
- 1/2 Green pepper, julienne sliced strips
- 1/2 Onion, chopped or sliced into thin strips
- 2 Tsp. chopped garlic
- 1 Pound skinless, boneless chicken breasts, cut into strips
1. Mix light mayo, sour cream, mustard, and parsley to make sauce. Set aside. Meanwhile, cook noodles according to package directions, omitting oil and salt. Drain. 2. Spray skillet with non-stick cooking spray and 2 tsp. canola oil and stir-fry. Then add the peppers, onion, garlic and chicken until done. Pour sauce over all and cook on low until heated. Add the noodles and toss to coat.
