Ingredients
- 8 oz. salmon fillet, skin removed
- 1 shallot, chopped
- 2 egg whites
- 2 egg whites
- 1/4 green pepper, finely chopped
- Ground black pepper
- 2 Tbs. fresh bread crumbs

- 2 lettuce leaves
- 2 slices tomato

On a clean chopping board, dice the salmon very fine. Place in a medium size bowl with the shallot. In a separate bowl, whisk the egg whites until frothy. Combine with the fish, shallots, diced peppers, and black pepper. Gently fold in the bread crumbs and form into 2 patties. Heat a skillet over medium high heat. Spray both sides of the patties with cooking spray and cook only 3 to 4 minutes on each side. Toast hamburger or Kaiser buns and spread with mustard. Garnish with lettuce and tomato.
